Festive baking: Spiced ginger cupcakes 


I am a fan of baking, it’s something I enjoy doing when I have some spare time and for a bit of fun, although I am no expert! But there is just something about this time of the year that makes me want to bake all the time… It’s all my favourite things too like these spiced ginger cupcakes!

Who doesn’t love a ginger spiced something over the festive period?!

To make these cupcakes You will need…

  • 160g of plain flour
  • 100g light brown sugar
  • 115g of unsalted butter
  • 120ml milk
  • 155g black treacle
  • 1 large egg
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of bicarbonate of soda
  • 1 teaspoon of vanilla bean extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground allspice
  • Icing sugar (to dust)

I love all the spices in this recipe and they help to make the most festive tasting cupcakes you will ever taste!

To start off with I pre heat my oven to 160°c (I have a powerful fan oven which burns food quickly)

Add into a bowl the sugar and butter, mix this up until smooth. Then add in the egg, beat this together until a smooth, creamy consistency. Next is when it starts to get messy, add in the black treacle, milk and vanilla extract and mix this al together. As you can see from the picture above its nothing spectacular to look at, at this stage…

In a separate bowl pour in the flour, baking powder, baking soda and spices! Mix these all together. Once mixed pour this bowl into the first bowl and mix all the ingredients together!

Once the mixture is all smooth and mixed together fill the cupcake liners 2/3rds of the way up and pop on the oven to bake for 15-20 minutes.

My favourite bit is taking them out the oven and the smell hits you straight away! I test to see if they are done by sticking in a cocktail stick and if there are no crumbs then it’s all good!

I leave these to cool and then start to decorate.

I will be honest and say… I was meant to do a cream cheese frosting but it went wrong so I opted for a sprinkle of icing sugar for a snowy blanket topped with a festive gingerbread star! But this is your chance to be as creative as you like.

The finishing product. I took these into work on Monday and they went down a treat. I think these make the perfect festive treat and are so simple to make!
