Festive baking : Gingerbread Men

As I mentioned the other day I love to bake over the festive period… There are so many festive treats that I absolutely love and make every year! I do love gingerbread men but this was actually the first time I have attempted to make them. I got my inspiration from the BBC here!

To make these yummy gingerbread men you will need:

  • 350g plain flour
  • 125g unsalted butter
  • 175g light brown sugar
  • 1 large egg
  • 2 teaspoon of ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon of bicarbonate of soda
  • 1 tablespoon of syrup
  • Icing sugar to decorate
  • Any cake decorations you fancy

First I sifted the flour and spices into a bowl. I then added the butter, bicarbonate of soda and honey. Mix the ingredients together.

In a separate bowl wisk the egg and sugar together and then add to the rest of the ingredients. Wisk together until a dough begins to form. Wrap the dough in a cling film and leave in the fridge for 15 minutes.
Take the dough out of the fridge and then roll it out using a rolling pin. I put flour down to ensure it didn’t stick to the chopping board.

Once you have rolled out the dough it really is easy from here, use your cutters to cut the gingerbread men and any other shapes you want. I did some stars too…

Pop them on a baking tray and bake for 15 minutes. Once they are done leave to cool for 5 minutes and then you can decorate!

I think gingerbread men are a festive baking essential! What are your favourite festive treats to make?
